Cous Cous
Cylinder-ground Sicilian durum wheat semolina.
Instructions for use:
Ideal for ethnic dishes and for interpretations of the classic recipe with a Mediterranean flavour: with fish, meat and/ or seasonal vegetables. Our couscous is not pre-cooked, therefore it must sit (”incocciare”):
- place the couscous on a tray, add a few spoons of EVO oil and a little water;
- work the semolina between your fingers, with circular movements, eliminating any lumps;
- let the couscous rest for at least two hours;
- cook the couscous in a special couscous maker or steam for about 2 and a half hours, stirring every 30 minutes.
