Thanks to its excellent alveographic characteristics, it is a versatile and multipurpose product: ideal for the production of professional pizza on a plate (Neapolitan- style pizza). Suitable for indirect doughs that require long maturation times (72 hours at controlled temperature) and high hydration (over 60%).
